Say hello to our new Lotus Chef, Chef Joseph Ku! We got to know him a little better through another Resorts World Insider Q&A! Here’s what he had to say:
Joseph Ku began his culinary career at 16 in Hong Kong and now brings over 35 years of experience. He started as a pantry helper, later becoming Sous Chef at Wing Fat Restaurant in Dallas in 1975. He then worked as Executive Chef at Chin’s Garden in San Francisco before opening Joe Ku’s in Dallas in 1995, specializing in traditional Chinese dishes, particularly Szechuan and Hunan.
Joseph trained at Today’s World Restaurant in Shanghai and then spent 7 years as Executive Chef of Asian Food at Beau Rivage Resort, overseeing various Asian dining operations. He later became Executive Chef at Caesars Hotel & Casino in Atlantic City, opening and managing KWI Noodle Bar and several other restaurants.
In 2011, Joseph took on the role of Executive Head Asian Chef at Pechanga Resort in California, overseeing multiple Asian dining venues. After years of traveling and working in major resorts, Joseph returned to the East Coast and became Executive Chef De Cuisine at Maryland Live Casino. His extensive experience in the casino industry makes him an invaluable addition to the team at Resorts World Catskills.
